Getting the Week Off to a Good Start with Meatless Monday

Meatless Monday is, according to The Washington Post, "a movement that has legs."

The trend toward eating more plant-based meals is taking root across the nation with colleges and universities, corporate cafeterias, hospitals, and entire cities participating. Groups from AARP to the Audubon Society are touting the benefits of meat-free meals. Celebrities like Oprah, Sir Paul McCartney, and Russell Simmons are encouraging their fans to go meat-free on Monday.

A survey by the American Meat Institute found that about half of the people in America are aware of the Meatless Monday campaign, and nearly 20 percent of those people say they’re participating.
