Make Mine Meatless

"In 2011 we joined the Meatless Monday campaign," says Miguel Villarreal of the Novato (California) Unified School District. "We love that it allows us to educate our students and families on the health and environmental benefits of a plant-based lifestyle."

Why Stop at Monday?

Ken Botts helped University of North Texas roll out Mean Greens, the country's first all-vegan dining hall. Botts calls the venture "hugely popular with students," noting that nine out of ten diners there are not vegetarian or vegan. "Nobody will even miss the meat," he says.
