Peanut Butter Delight Doggie Birthday Cake

A treat for your special canine friend

Serves 8

Cake

2 cups white or whole wheat flour
2 teaspoons baking soda 
1/2 cup peanut butter 
1/4 cup vegetable oil
2 cups shredded carrots
2 teaspoons vanilla
2/3 cup syrup (rice syrup, agave, etc.)
2 tablespoons Ener-G egg replacer plus 2 tablespoons water


Frosting

Plain soy yogurt
Food coloring, if desired 

Preheat oven to 350 F (180 C).

Sift together flour and baking soda. Add the remaining ingredients and mix well. Add a little water if needed for consistency.

Spray a 9" round cake pan or pie mold with nonstick spray. Pour in the batter. Bake for 50-55 minutes, then cool.

Frost this cake with the yogurt, mixed with food coloring of your choice, if desired. For even more fun, decorate with dog biscuits or kibble. 

Put a slice in your dog's dish and stand back!

Note: In place of the egg replacer you can use 2 tablespoons of flax meal mixed with 2 tablespoons water, or a well-mashed banana.
