Sweet Potato Surprise for Birds
Treats for your tweetie
1 large broccoli floret
1 small carrot, pared
1/2 celery stalk
1/2 apple, peeled and cored
1/2 cup cornmeal (optional)
1 cup bird seed
Remove the skin from the potato and mash it with a fork in a medium mixing bowl. Cut the buds off the broccoli floret with a knife (freeze the stem for making veggie stock) and add the buds to the sweet potato. Finely mince the carrot, celery, and apple.
Mix all of the vegetables together, and add small amounts of cornmeal as needed to get a good consistency.
Pour the bird seed into a shallow bowl or pie pan.
Roll teaspoonfuls of the mixture into balls and roll them in the bird seed. Store them in a single layer and freeze what you won't use in a day or two.
