"Chorizo" and Soy Sausage Scramble

Start your day with this high-protein and humane warm entree

Serves 2

1 tablespoon olive oil
1/2 cup onion, diced
2 veggie sausage patties, chopped
2 ounces meatless chorizo (Soyrizo)
8 ounces (1/2 pound) firm tofu, drained
Salt and pepper to taste

In a large nonstick saucepan, heat the oil over medium heat. Sauté the onions, sausage pieces, and "chorizo" for 2 minutes or until the onion turns translucent.

Crumble the drained tofu into the pan, and sauté the tofu with the other ingredients until all of the ingredients are mixed together and hot. Add salt and pepper to taste. The "chorizo" will be completely melted into the tofu by the time it's done.
