Savory Tofu Scramble

Protein to go with your hash browns

Serves 4

1/4 cup red onion, chopped
1 tablespoon oil
1 pound medium/firm tofu, crumbled
1/2 cup salsa
1/4 cup fresh cilantro, chopped
1/2 teaspoon turmeric
1/2 cup vegan "cheese," finely grated
1 avocado, pitted and sliced

In a medium sauceman on medium-high heat, saute the onions in oil until translucent.

In a medium bowl, stir together the crumbled tofu, salsa, cilantro and turmeric until well mixed. Add the tofu mixture to the onions, and scramble until the tofu is browned and all the liquid has evaporated.

Toss with the "cheese" and avocado, and serve immediately.

Makes 2 large or 4 small servings.
