Peanut Butter Power Pie
Easy as pie to fix--and to eat
One 14-ounce package of soft tofu, well drained
1 cup peanut butter, smooth or chunky
1/2 cup date sugar (ground dates)
2 tablespoons soy milk
2 teaspoons vanilla extract
Use a graham-cracker crumb crust or a flour pie crust, baked 10-14 minutes in 400 F (222 C) oven and cooled
Chocolate chips (optional)
Blend all filling ingredients until smooth. Pour evenly into the crust. Decorate with chocolate chips if desired.
Refrigerate at least an hour.
