Pears Poached with Apple and Apricot
2 tablespoons sugar
1 tablespoon plus 1 teaspoon cornstarch
1-1/2 cups unsweetened apple juice
1 teaspoon vanilla
1/3 cup dried apricots, chopped
2 fresh Bartlett pears, cored and cut in half lengthwise
Chopped crystallized ginger (optional)
Combine the sugar and cornstarch in a 2-quart saucepan. Blend in the juice and vanilla. Stir in the apricots. Cook over medium heat, stirring frequently, for 4 to 6 minutes or until mixture is slightly thickened and translucent and begins to bubble.
Reduce the heat to medium low. Add the pear halves. Cook for 10 to 18 minutes, or until the pears are tender.
Using a slotted spoon, remove the pears from the poaching liquid. Serve warm or chilled with poaching liquid. Lightly sprinkle each serving with ginger if desired.
