Snickerdoodles are yummy cookies with a silly name.
3 tablespoons sugar
1-1/2 teaspoons ground cinnamon
1-1/3 cups flour
3/4 cup sugar
2 teaspoons baking powder
1/4 teaspoons salt
1 tablespoons ground flax seeds
3 tablespoons water
1/2 cup vegan margarine
Preheat oven to 400°F (222°C).
In a small bowl, stir together the sugar and cinnamon, and set aside. In a medium bowl, stir together the flour, sugar, baking powder and salt. In a small bowl, stir together the flax seeds and water.
Add the margarine and flax mixture to the flour mixture, and stir until well blended.
Shape dough into 1-1/4 inch balls, roll in the cinnamon-sugar mixture, and place on cookie sheet. Bake for 8-10 minutes.
Remove from oven, and let sit 2-4 minutes before removing to place on cooling rack. Makes 16 cookies.
