4 large flour tortillas (try spinach or sun-dried tomato for some color)
1 bag of pre-washed lettuce or spinach
Your favorite veggies, washed and sliced or shredded (e.g., mushrooms, carrots, celery, radishes, tomatoes, corn, beets, zucchini, artichoke hearts, etc.)
A tub of your favorite hummus
1 package Tofurky deli slices (optional)
Spread a layer of hummus on each tortilla, up to 1 inch from the edges. If you're using Tofurky slices, place a layer over the hummus.
Sprinkle your veggies on top, roll up, and enjoy.
Tip: For an even easier recipe, pick up a small, salad bar to-go box from your favorite grocery store and fill it with your choice of cut veggies.
