Reuben Tempeh Sandwich
Great texture and lots of flavor
Tempeh bacon (see below)
2 tablespoons vegetable oil
8 slices rye bread, toasted
4 tablespoons vegan mayonnaise, such as Vegenaise, Nayonnaise, or Wildwood's Garlic Aioli.
4 teaspoons Dijon-style mustard
1 cup drained sauerkraut
4 lettuce leaves
4 tomato slices
1 package tempeh (about 1 pound)
1/4 cup soy sauce
1 teaspoon liquid smoke
2 tablespoons maple syrup
1/4 cup water
Canola oil for frying
Cut the tempeh into thin, bacon-size strips. Steam for about 10 minutes. Combine the ingredients to make the marinade.
Put tempeh slices in a shallow dish, and pour the marinade on top. The longer you marinate, the stronger the flavor will be, but it will often be ready after less than a half hour. Shake now and then to make sure all the tempeh is covered with the marinade.
Pan-fry in just enough oil to cover the bottom of the pan. Fry until crisp on one side; turn and fry again until crisp on the other. Remove from heat and set on a plate with a paper towel to absorb excess oil.
Assemble the sandwiches using the above ingredients along with the tempeh bacon. Spread the bread with mustard and mayonnaise, and add the sauerkraut, lettuce and tomato slices.
Serving Suggestions and Variations
- Use tofu in place of tempeh. Cut tofu into strips, marinate and sauté.
- Create a BLT sandwich with tomatoes and eggless mayonnaise, such as Vegenaise, Nayonnaise, or Wildwood's Garlic Aioli.
- Serve the tempeh bacon with scrambled tofu or pancakes for a hearty breakfast.
What is liquid smoke? Liquid smoke is produced by burning hardwood chips (hickory, mesquite, etc.) and condensing the smoke into a liquid form. The liquid is then scrubbed and filtered to remove all impurities. A little goes a long way, and it's a great flavoring for many dishes, not just for the tempeh bacon.
What is tempeh? Tempeh (pronounced TEM-pay) is a traditional Indonesian food made from fermented soybeans combined with rice.
How else can I cook with tempeh? Steaming before other uses makes the tempeh more tender and less bitter.
- It is delicious on the grill: Marinate steamed tempeh slices in an herb marinade or a zesty barbeque sauce, then grill until browned.
- Add chunks of tempeh to spaghetti sauce, Sloppy Joes, chili mix, or favorite soups and casseroles.
- Steam and grate or dice tempeh and mix with chopped onions and celery and eggless mayonnaise for a great sandwich or salad.
- Tempeh can replace tofu or meat in your favorite stir-fry or sauté.
