Chipotle Yam Wedges
2 tablespoons extra-virgin olive oil
2 1/2 to 3 teaspoons chipotle hot sauce
2 pounds sweet potatoes or yams, peeled and cut in wedges
1/4 teaspoon sea salt
Preheat the oven to 400 F (204 C).
In a bowl, combine the olive oil and the hot sauce, then add the yam wedges and toss. Transfer to a baking sheet lined with parchment paper and season with the salt.
Bake for 55 to 65 minutes, tossing once or twice, until the wedges have browned and are soft when pierced.
Season to taste with additional salt or hot sauce if desired.
