Easy Baked Acorn Squash
Serves 2
(1) Acorn squash, cut in half, seeds removed
Earth Balance (or other vegan spread)
Approx. 1 cup applesauce
Cooking oil
Allspice, to taste
Cinnamon, to taste
Pre-heat the oven to 375º.
Rub the inside of each squash half with Earth Balance or another vegan buttery spread. Sprinkle Allspice on each half. Bake face down on an oiled cookie sheet for 30 minutes at 375º.
After 30 minutes, flip each half over so the inside faces up. Fill each half with applesauce and sprinkle with cinnamon. Bake for another 30 minutes or until squash is tender.
