Ranch Dressing the "Slacker" Way

Don't have all the spices to whip up a batch of ranch dressing? Try this no-fuss version.

Miki Tapio Walsh

Serves 5

1 package of Hidden Valley Ranch dip mix
12.5-ounce package firm silken tofu
Soy milk to taste

Note: Make sure you use Hidden Valley dip mix. Don't use the dressing mix, which has dairy in it.

Blend the mix and tofu in a blender or food processor.

Add enough soy milk to make it the right consistancy. You might not need to add any if you'll be using it as a dip, but you'll need to add some to make it liquid enough for a dressing.

Chill thoroughly.

If you want to get fancy, try the "from scratch" version of this recipe.
