A traditional Irish quick bread
3 cups all-purpose flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1/4 cup sugar (optional)
1 cup raisins (optional)
1 tablespoon caraway seeds (optional)
1 1/2 cups soy milk
1 teaspoon vinegar
Preheat the oven to 375 F (190 C).
Sift the dry ingredients together in a large bowl, including the raisins or caraway seeds if you are using them. Add the vinegar and 1 cup of the soy milk, reserving 1/2 cup. Combine with a fork, adding more liquid as needed until it forms a sticky dough.
Knead the dough lightly on a floured surface for 1 minute. Form it into a flattened ball. Place the loaf on a parchment-lined cookie sheet, silicone baking mat, or lightly oiled cookie sheet. Mark a large X on the top with a sharp knife.
Bake the loaf until it is golden and sounds hollow when tapped on the bottom, about 40 to 45 minutes.
