Refried Bean Soup

This delicious comfort food is surprisingly easy to fix.

Serves 5

1 large onion, chopped
2 teaspoons minced garlic
2 teaspoons olive oil
1 14-ounce can vegetarian broth
1 14-ounce can stewed tomatoes
1 15-ounce can black beans
1 15-ounce can red kidney beans
1 16-ounce can vegetarian refried beans
1/2 teaspoon cumin
pepper, to taste

In a small saucepan, sauté the onion and garlic in olive oil until the onion begins to brown, about 5 minutes. In a large pot, add all of the ingredients and bring to a boil. Reduce heat and stew for about 10 minutes before serving.
